Tacos with Chipotle Greek Yogurt Sauce

Have a busy week ahead of you? Don’t think you’ll have time to make a delicious meal? Think again, amigo. Prep these tacos on a weekend and you’ll be able to make Taco Tuesday happen in minutes. Each ingredient gets its own Ziploc® brand sandwich bag so everyone can make their own, with the flavors and toppings of their choice. And the creamy, spicy yogurt sauce? It’s delish.

Ingredients

    corn tortillas

  •   

    Cooked, shredded rotisserie chicken

  • 1

    cup plain Greek yogurt, more to taste

  • 2

    tbsp of chipotle in adobo sauce

  •   
    Cilantro
  •   
    White onion, diced
  •   
    Red cabbage, shredded
  •   
    Tomatoes, sliced
  •   
    Lime wedges

Directions

Make ahead: 

  • 1 Prep cilantro, white onion, red cabbage, tomatoes and lime wedges; place in separate Ziploc® brand sandwich bags with easy open tabs.

To make the sauce:

  • 1 Add yogurt to blender or food processor with chipotle and pulse until blended. Check for spiciness and add more if it’s too hot.

Ready to eat: 

  • 1 Warm tortillas until soft in a frying pan. Assemble tacos with assorted toppings. Dollop with yogurt sauce.
