Curried Mango Pork

    can (13 ounces) coconut milk

    tbsp curry powder

  • 1

    tsp minced fresh ginger

  • ½

    tsp salt

    tsp ground black pepper

    pounds pork loin or pork tenderloin, cubed

    cups mango (fresh or frozen), cubed

  • 1 ½

    cups green beans (fresh or frozen)


  • 1 In a large bowl, whisk to combine coconut milk, curry powder, ginger, salt, and pepper.

    Add pork, mango, and green beans; toss to coat.

    Pour into a Ziploc® Freezer Bag, seal, and store in the freezer.


  • 1 Thaw and pour the contents of the Ziploc® Freezer Bag into a slow cooker.
  • 2 Cook on high for 4 hours or low for 8 hours. Serve over rice and garnish with fresh basil, if desired.
