Freeze-Ahead Lime and Jalapeño Fajita Chicken

Less time, more lime! This juicy fiesta of flavors is prepped and frozen ahead of time, so it’s all ready to go the next time you need a quick, yet delicious meal.

Ingredients

    lbs boneless, skinless chicken thighs
  • 1
    onion, sliced
  • 2
    bell peppers, sliced
  • 3
    garlic cloves, minced
  • 1
    large jalapeño, cored and seeded then diced
  • 3
    tbsp brown sugar
  • 3
    tbsp soy sauce
  •   
    juice and zest of 2 limes
  • 2
    tsp ground cumin
  • 1
    tsp kosher salt
  • ½
    cup chopped fresh cilantro, for garnish
  •   
    lime wedges, for garnish

Directions

  • 1 Combine all of the ingredients from chicken through kosher salt, into a gallon size Ziploc® brand freezer bag. Seal the bag and gently push the ingredients around to combine.
  • 2 Freeze until ready to cook. In the freezer, this meal will keep for 1 month.
  • 3 The day before you plan to cook, simply take bag out of the freezer and put in the refrigerator to thaw.
  • 4 To cook: Preheat your oven to 350°F. Transfer the thawed ingredients to a 9x13-inch baking dish and bake for 45-55 minutes or until the chicken is cooked through.
  • 5 Garnish with cilantro and lime wedges, and don’t forget to spoon some of the tasty sauce over the chicken!

Tip

This recipe makes a flavorful, complete meal - although we also love to serve it over rice or with warm tortillas for delicious chicken soft tacos.
