Shrimp Fried Rice

This holiday season, don't get rid of that leftover shrimp cocktail ring - turn your leftovers into something delicious like this shrimp fried rice. So easy to make, so delicious and a great recipe to clean out your fridge, throw in any leftover veggies you have, too!

Ingredients

    Leftover shrimp cocktail (ideally 10+ shrimp)

    cups day old white rice

  • 1

    large carrot

  • 5-6

    green onions

  • 2

    eggs

  • 2

    king oyster mushrooms (optional)

  • 3-4

    cloves garlic

  • 1-2

    tbsp grated fresh ginger

  • 1-2

    tbsp chili crisp, extra for garnish

  • 1-2

    tbsp seasoned soy sauce

  •   

    Canola oil for cooking

    Roughly chop leftover shrimp, remove tails if needed

    If using the king oyster mushrooms, cut in half and score the inside

  • 3

    Peel and dice the carrot. Cut the ends off the green onions and cut off the green part, reserve. Finely slice the white part of the green onions.

    Thinly slice the green part of the onions, lengthwise, and place in a bowl of cold water.

    Mince the garlic and grate the peeled, fresh ginger.

    Beat one egg in a bowl.

    In a wok or large pan, add in 2-3 tbsp canola oil. Add in the chopped carrots and cook 2-3 minutes to soften. Add in the garlic, ginger and green onions, mix and allow to cook and soften. Meanwhile, if you are making the mushrooms, add oil to a separate pan and cook the mushrooms until golden, flipping midway. Once the vegetables are softened and the garlic and onion are fragrant, add the chili crisp, adjusting the amount based on your desired spice level. Mix.

    Using your spoon or spatula, create a hole in the centre of the vegetables and pour the beaten egg into it. Scramble the egg into the vegetables.

    Add in the day old rice and chopped shrimp to the pan and mix. Season with the soy sauce to taste. Mix and allow to cook another few minutes to heat up the rice and shrimp.

    In a separate pan, fry an egg sunny side up.

    To plate, add the shrimp fried rice to a bowl. Top with the grilled mushrooms, the sunny egg, and the green part of the green onions.

Tip

Granish with a drizzle of chili crisp for some extra spice
