Peel and cut the sweet potato lengthwise into 4 equal spears.
Peel and slice the beet into 1cm pieces.
Peel and chop the shallot into 4 pieces.
Place all the ingredients in a Ziploc Endurables bag and seal it.
Shake and mix the contents well, making sure the sweet potato remains at the bottom of the bag.
Create a 1-inch opening for venting in the Ziploc seal.
Place the bag on a microwave-safe plate.
Microwave the bag for 15 minutes.
Use an oven mitt to remove the plate from the microwave and let it cool for 2 minutes.
Handle the bag using the Cool Grab Tabs.
Plate the entire pouch and garnish with fresh thyme. Optionally, finish it off with feta cheese.
