Roasted Chicken Provençal with Vegetables

An easy and delicious chicken provençal recipe, perfect for dinner

Enjoy the flavors of Southern France with this delicious chicken and vegetables dish. It is the perfect meal for two when prepared in a Ziploc® Endurables Medium Container.

    Oz. fresh green beans or asparagus spears

    Grape tomatoes

  • ¾

    Tsp. herbs de Provence, divided use

    Tbsp. fresh lemon juice

  • 3

    Tbsp. mayonnaise

  • 2

    Tbsp. finely chopped fresh flat-leaf parsley

    large garlic clove, pressed

  • ½

    Tsp. grated lemon zest

    large boneless skinless chicken breast (9 to 10 oz.), cut in half

    pitted niçoise or small Kalamata olives, cut in half

    Tbsp. goat cheese crumbles

    Heat oven to 375°F.

    Mix mayonnaise, parsley, garlic, lemon zest and remaining herbs until blended; spread onto one side of chicken. Place over ingredients in Endurables Container with mayonnaise side up, leaving space between chicken pieces. Place Endurables Container on baking sheet.

    Bake with zipper open 35 to 40 min. or until chicken is done (165°F). Remove from oven; let stand 5 min. Use Cool Grab Tabs™ to carefully remove Endurables Container from baking sheet.

    Divide chicken and beans between 2 serving plates; top beans with olives and cheese.


Leaving space between the chicken pieces allows for the chicken to cook more evenly.
