Apple and Almond Butter “Sandwiches” with Granola Sprinkles

Going breadless doesn’t have to leave you wanting more. Yummy almond butter and rich granola make a great and filling protein-packed combo, especially with a side of honey Greek yogurt. Here’s a healthy lunch on the go, no microwave or refrigerator needed!  


  • 1

    Honeycrisp or other apple, sliced in rounds
    Half a lemon
  • 2

    tbsp almond butter
  • ¼
    cup granola, chopped


  • 1 Thinly slice the apple in rounds. Cut out the core of those that need it. 
  • 2 Rub slices with lemon half to prevent browning.  
  • 3 Spread half the slices with almond butter and top with granola. Top with the other half of the slices.
