Garlic Toast + Brie Grilled Cheese

This fancy grilled cheese is really just the simplest twist on an old favorite, plus it involves one of my favorite tricks in the kitchen! (See below!)

    Rustic white bread

  • 1 Slowly saute the minced garlic in butter in a non-stick pan.
  • 2 Toast two pieces of bread, then flip and add cheese. Put the second piece of bread on top and gently smoosh the sandwich together over the heat while the brie gets nice and melty.

(My favorite garlic trick!) To quickly peel garlic, remove some cloves from the bulb. Smash each one against a cutting board with the knife and the heel of your palm. Put them into a Ziploc® container, seal the lid, and give it a good shake. This will quickly remove all those pesky, papery peels. Then mince the garlic. You can even store extra minced garlic in a small Ziploc®; container.
