The morning scramble to pack lunches can be brutal. This week, get some of that time unscrambled (i.e., back) by packing a week’s worth on Sunday evening. All you need is one grocery list—and an hour in the kitchen—for five easy, healthful, packable lunches. Ready set...shop, prep, assemble!

When it comes to packing lunch, prep is your best friend. This is where you become a kitchen ninja! Prep

  • Grapes
  • Raspberries
  • Strawberries
  • Oranges (2)
  • 1 lemon
  • Cherry tomatoes
  • Romaine lettuce
  • Celery
  • Red pepper
  • Salsa
  • Pita bread
  • Small bag tortilla chips
  • Blanched slivered almonds
  • Small bag cashews
  • Whole wheat crackers
  • Mayo
  • Salad dressing
  • Peanut butter
  • Raisins
  • Hummus
  • Chicken breasts
  • Cheddar cheese block
  • Dark chocolate bar
  • Dark Chocolate chips

Prep

  • Start with the fruits and veggies. Once everything is washed and dried, chop one stalk of celery finely, for the chicken salad, and chop rest of the celery into sticks (big enough for a spread of peanut butter).
  • Quarter a few cherry tomatoes and leave the rest whole.
  • Dice the red pepper.
  • Tear lettuce into bite-sized pieces.
  • Peel and segment the orange.
  • Separate the grapes into bunches.
  • Next, shred half the cheese, and cut the rest into cubes, roughly the same size as the cherry tomatoes.
  • Then, break the dark chocolate into squares.
  • Last, take the cooked chicken breasts and chop. Set aside 2 cups for the chicken salad. Cut the rest into small cubes.

Assemble

  • 1 Line up your prepped and ready ingredients, bags and containers.
  • 2 For the chicken salad, combine the 2 cups of chopped, cooked chicken with ½ cup of mayo, 1 tablespoon of lemon juice, ½ cup of almonds and 1 stalk of chopped celery in a bowl and season with salt and pepper to taste.
  • 3 Now, use the photos and menus below as a guide to assemble the lunches!
  • 4 Once lunches are assembled, they’re ready for the fridge. When it’s time, just grab and go.
