cup grated parmesan
tsp paprika
tsp garlic powder

Cut an eggplant into strips just like fries.
Combine the chickpea flour, parmesan, paprika, garlic powder, salt, and pepper in a low, wide Ziploc® container.
Put the egg whites in a separate low, wide container.
Dip each strip of eggplant into the egg whites, then roll in the flour mixture.
Flip and bake for 5 more minutes or until perfectly golden.
