Eggplant Fries

Oh, french fries...my favorite guilty pleasure. Sigh. This recipe is a really great healthy alternative that gives me the crunch I crave.

Ingredients

  • 1
    eggplant
  • ½

    cup chickpea flour

  • ½

    cup grated parmesan

  • ½

    tsp paprika

  • ½

    tsp garlic powder

  •   

    Sea salt

  •   

    Pepper

  • 2

    egg whites

Directions

    Cut an eggplant into strips just like fries.

    Combine the chickpea flour, parmesan, paprika, garlic powder, salt, and pepper in a low, wide Ziploc® container.

    Put the egg whites in a separate low, wide container.

  • 4

    Dip each strip of eggplant into the egg whites, then roll in the flour mixture.

  • 5 Place on a lined baking sheet. Bake for 10 minutes in a preheated oven at 450 degrees.

    Flip and bake for 5 more minutes or until perfectly golden.
