No-Bake Cherry Almond Bars

8 large bars or 16 squares
When you’re pressed for time, the less you have to cook, the better. This no-bake cherry almond bars recipe is so good, you’ll totally feel like you cheated. Whip up these delicious treats for your next holiday event! They travel well—just remember to use Ziploc® holiday containers to prevent them from getting squished.

Ingredients

  • 3
    cups rice cereal
  • 1 ½
    cups roasted and salted almonds
  • 1
    cup dried cherries
  • ½
    cup honey

  • cup light brown sugar
  • ¼
    cup coconut oil, melted
  • 1
    tsp vanilla extract
  • ½
    cup dark chocolate chunks

Directions

  • 1 Grease or line an 8”x8” baking pan with parchment paper.
  • 2 In a large bowl, stir to combine rice cereal, almonds, and cherries.
  • 3 In a saucepan over medium heat, combine honey, sugar, coconut oil, and vanilla extract; stir. Bring to a simmer and cook until sugar is dissolved; about 2 minutes. Allow to cool for 5 minutes. 
  • 4 Pour over rice cereal mixture and fold to combine with a spatula. Fold in chocolate chunks. Evenly spread and press into the prepared baking pan. Refrigerate for 20 minutes to set. 
  • 5 Once set, remove from pan and cut into bars. Serve or store in a Ziploc® holiday container.
