Raspberry Beet Ice Cream

Serves 6
A refreshing and nutritious treat with the added benefits of vitamins and minerals from beets.

Ingredients

  • ½
    cup cooked beet, about 1 medium
  • 1
    cup raspberries, frozen or fresh
  • ¼
    cup apple juice
  • 1 ½
    tbsp honey
  • ½
    tsp vanilla extract
  •   
    Optional: vanilla flavored Greek yogurt

Directions

  • 1 If not using pre-cooked beets, cook the beet until tender, about 30-45 minutes. Cool down completely.
  • 2 Puree all the ingredients together in a blender or food processor. Adjust the sweetness and texture by adding more honey or apple juice.
  • 3 Strain out the raspberry seeds for a smoother texture, or leave them in for a bit of a crunch.
  • 4 Pour the mixture into a small Ziploc® container for a single serve ice cream treat, or make popsicles using a mold. Adding a swirl or a band of vanilla flavored Greek yogurt provides a nice balance to the berrylicious ice cream.
  • 5 Store in the freezer.
