Baked Berry Oatmeal

Baked Berry Oatmeal is basically my favorite thing ever. I just mix it up and pop it in the oven, and out comes an amazing breakfast I can serve to all my guests. Every summer I buy way too many berries, so I rinse and dry them and throw them in Ziploc® brand freezer bags to store in the freezer for later.

Ingredients

  • 2

    cups of steel cut oats

  • 1

    tsp baking powder

  • 2

    tsp cinnamon

  • ¼

    tsp salt

  • cup maple syrup

  • 2

    cups of milk

  • 1

    large egg

  • 1

    tbsp of melted butter + enough butter to coat the pan

  • 2

    tbsp vanilla

  •   
    frozen berries (raspberries, blueberries, strawberries—any kind of berry!)
  •   
    walnuts

Directions

  • 1 Preheat your oven to 375 degrees and butter a high-sided baking dish.

    Mix together the oats, walnuts, baking powder, cinnamon, salt, and maple syrup.   Once this is combined, pour it into the buttered baking dish.

    In a separate bowl, stir together the milk, egg, melted butter, and vanilla.

    Drizzle the wet ingredients over the dry, then top with the frozen berries and walnuts.

    Cook for 35-40 minutes or until settled, and dig in!
