Waffle Breakfast Sandwich

The holidays can get pretty hectic, but that doesn’t mean you need to get stressed about breakfast. Whip up waffles ahead of time, freeze or refrigerate them, and wake up to the perfect “canvas” upon which to get creative. Try this waffle breakfast sandwich to perk up basic waffles and will have your friends and family asking for more. Now, who’s hungry for some breakfast?

Ingredients

  •   
    waffles
  •   
    eggs
  •   

    cheese (I suggest a smoked cheddar)

  •   
    bacon
  •   

    salt & pepper to taste

Directions

  • 1 To start, cook up a few strips of bacon. I really love bacon, so I tend to make extra.

    Then, scramble up some eggs, using salt and pepper to taste. I also add shredded cheese to my scrambled eggs, just for fun.

    This is the fun part: break apart the waffle so you have a top and bottom. Spoon on your cheesy eggs and add strips of bacon. Top with the other half and you’re set!

Tip

To start, whip up a batch of waffles. Frozen waffles are fine too! If you make waffles ahead of time, I suggest freezing them in a Ziploc® brand bag. To defrost them, place the frozen waffles on the middle oven rack and bake for 10 minutes at 350 degrees.
