Lemon-Garlic Shrimp Stir Fry

After a long day at work followed by shuttling children to and from school and soccer practice, we all want a fast, healthy and delicious dinner. Plan ahead for this foolproof meal by pre-mixing the lemon-garlic sauce, and the shrimp + vegetables in Ziploc® brand bags for an insanely quick meal that everyone will love.

Ingredients

    pound peeled jumbo shrimp

  • 1

    bunch asparagus, trimmed

  • 1
    red bell pepper, seeds removed and sliced
  • 1
    shallot, peeled and sliced
  • ¼

    cup lemon juice

  • 3

    tbsp canola oil

  • 1

    tbsp soy sauce

  • 1

    tsp lemon zest, grated

  • 1

    tsp cornstarch

  • ¼

    tsp ground black pepper

Directions

  • 1 In a gallon size Ziploc® brand bag, combine shrimp, asparagus, bell pepper, and shallot. In a quart size Ziploc® brand bag, combine lemon juice, 2 tablespoons canola oil, soy sauce, lemon zest, and cornstarch. Seal bags and refrigerate for up to 1 day before cooking.
  • 2 When ready to cook, heat the remaining oil in a wok or a large sauté pan over high heat. Use the easy open tabs to open your Ziploc® brand bag of ingredients. Add shrimp and vegetables. Cook, stirring frequently, for 3 minutes.
  • 3 Next, shake the lemon sauce bag vigorously until well combined. Add to shrimp and cook for an additional 2-3 minutes until shrimp are opaque and bright pink.
  • 4 Serve over soba or udon noodles for a complete meal.

Tip

At mealtime, place the shrimp, red bell peppers, shallots, and asparagus in a wok or pan, sear for 3 minutes, and then add the lemon-garlic sauce. Sauté for a few more minutes and bam! Dinner’s on the table in a flash. Serve over quick-cooking soba noodles for a meal that rivals any take out!
