Asian Chicken Noodle Soup

Here’s a fun and easy twist on classic chicken noodle soup! Done up Asian style, it’s deliciously spicy and reliably comforting. Pack it up with some edamame and pineapple on the side, and you’ve got a great lunch to bring to work or school.

Ingredients

  • 1

    quart chicken stock
  • 2

    garlic cloves, minced
  • 2

    tsp minced ginger
  • 3

    tbsp soy sauce
  • 1

    tsp sriracha sauce (or more to taste)
  • 1

    tbsp rice vinegar
  • 3

    oz spaghetti noodles
  • ¾
    cup shredded rotisserie chicken
  • ½
    cup scallions, finely sliced

Directions

  • 1 Add chicken stock, garlic, ginger, soy sauce, sriracha, and rice vinegar to a medium pot. Bring to a boil and add spaghetti noodles. Boil 8-10 minutes until noodles are al dente.  
  • 2 Place chicken in the bottom of serving dish, bowl, or to-go container. Pour noodles and broth over. 
  • 3 To serve, top with scallions. Add additional sriracha to taste.
