Marinate-And-Go Tomato Toast

Between getting everyone ready and out the door, it can be hard to find time to eat. But what about a recipe that uses the time spent being busy and/or commuting to its advantage? Marinate your ingredients while you’re getting ready for (or going to) work or school in a Ziploc® brand sandwich bag and then voila! By the time you’re ready to eat you’ll have a delicious, marinated tomato toast to scarf down—for breakfast or lunch!  

Ingredients

    Marinade:
  • 1

    tsp Balsamic Vinegar

  • ½

    cup extra virgin olive oil

  • ¼

    tsp fresh thyme

  • Toppings:
  • 2

    slices tomato

  • slice toast

  • tbsp Ricotta Cheese

  • tsp scallions chopped

  • 3
    Basil leaves, chopped

    Salt, pepper  

Directions

  • 1 Combine your tomatoes, balsamic vinegar, extra virgin olive oil and thyme in a Ziploc® brand sandwich bag. Let marinate for 1-2 hours.
  • 2 Toast bread. Smear ricotta cheese on top.
  • 3 Add tomatoes.
  • 4 Add toppings.
  • 5 Enjoy!
