Potluck Problem Solvers

October 15, 2015
Life’s agenda of chaos rears its head with every single holiday party invite—at school, at work, at the neighbor’s, at your aunt’s...and you can’t go empty handed! The good news is that sometimes the tastiest treats are the easiest to make, and sometimes you can skip the trip (to the store). Here are some faves that get raves.

Brown Sugar Candied Bacon

Potluck Problem Solvers
Here’s a quick way to bring (not home) the bacon! Preheat oven to 400°F. In a Ziploc® brand bag, combine ⅓ cup firmly packed brown sugar and 2 tsp black pepper, shake to mix. Add a slice or two of bacon at a time, shake vigorously in bag until coated. Bake on a baking sheet for 15-20 minutes until cooked through. Yum! Brown Sugar Candied Bacon

White Bean and Roasted Red Pepper Dip

Potluck Problem Solvers
This dip will have your friends asking for the recipe...but it’s so easy, you can’t even call it a recipe! In a blender, combine a 15-ounce can rinsed cannellini beans with ½ cup jarred roasted bell peppers, ¼ cup extra virgin olive oil, 1 clove garlic, 1 tbsp lemon juice, 1 tsp smoked paprika, and a pinch of salt and pepper. Puree until smooth. Add chopped parsley for garnish. Pretty! White Bean and Roasted Red Pepper Dip

Rosemary Parmesan Oyster Crackers

Potluck Problem Solvers
Truly, this is one shake and bake dish you’ll be proud to give as a hostess gift! Preheat oven to 250°F. In a gallon size Ziploc® brand bag, combine ¼ cup extra virgin olive oil, 2 tbsp chopped rosemary, and 1 clove minced garlic; shake to combine. Add a 16-ounce bag of oyster crackers and shake to mix until crackers are coated. Empty bag onto a baking sheet, sprinkle with grated Parmesan, and bake for 15-20 minutes until crackers are golden. Deliver to the party before you devour the whole bag. Rosemary Parmesan Oyster Crackers

Spicy Maple Roasted Cashews

Salty and sweet cashews...perfect for the holiday season. Preheat oven to 350°F and line a baking sheet with parchment. In a gallon size Ziploc® brand bag, combine 2 cups raw unsalted cashews, ¼ cup maple syrup, 1 tsp sea salt, and ¼ tsp cayenne pepper. Shake in bag until nuts are coated. Pour on baking sheet and bake for 20 minutes, stirring occasionally. They’ll go nuts for ‘em!   Spicy Maple Roasted Cashews
