Tater Tots + Nachos = TotChos

The best part of this recipe is that it can use up anything that you have on hand! For instance, I like to keep black beans on hand because they are a healthy protein that I can add to anything. Also, this recipe is both kid and vegetarian friendly, but you can also use pre-cooked lean ground beef or even chorizo. Touchdown!        

Ingredients

  •   

    Tater tots (I suggest using the frozen kind)

  •   

    Shredded cheese

  •   

    Black beans

  •   

    Diced tomatoes

  •   

    Diced red onion

  •   

    Jalapeno - cut into rounds

  •   

    Avocado - thinly sliced

  •   

    Sour cream

  •   

    Cilantro

  •   

    Diced scallions

  •   

    Your favorite hot sauce

    On game day, simply bake the tater tots in an oven-safe dish according to the instructions on the packaging.

    When they still have 5 minutes to cook, sprinkle on the black beans and top with cheese—lots of it!

    Continue baking until the cheese is nice and gooey. 

  • 4 Remove from the oven and top with all your favorites. Add a dollop of sour cream and a drizzle of your favorite hot sauce, and it’s game on!
