The Simplest Corn Salsa

Chop, dress, toss—that’s all it takes to get fresh, chip-worthy salsa—and don’t let anyone try to tell you otherwise. This colorful dip comes together fast in a Ziploc® brand bag with nuggets of sweet corn, bursting-with-flavor tomatoes, and creamy avocado. Add a spicy bite of red onion and coat in a bright-tasting dressing, and all that’s missing are the chips.

Ingredients

  • 1-2

    ears of sweet corn

  • ½

    pint of cherry tomatoes, halved

  • ¼
    red onion, chopped
  • 1
    avocado, pitted and chopped
  • ¼

    cup of extra virgin olive oil

  • 2

    tbsp lime juice, more to taste

  • 1-2

    tbsp fresh cilantro leaves, roughly chopped

    Salt and pepper

Directions

  • 1 Boil ears of corn in water until tender. Shave kernels off the cob into a large bowl and add tomatoes, red onion and stir until combined. Add avocado and fold in carefully.
  • 2 In a gallon size Ziploc® brand bag, combine olive oil, lime juice, salt and pepper. Taste and adjust seasonings, and add lime juice as desired.
  • 3 Add veggies to the bag, seal, and toss to combine. Use the easy open tabs to open bag and pour ingredients into bowl.
