Fruited Basmati Rice Pilaf

A little bit of salty and a little bit of sweet makes the perfect combination for this basmati rice. You can cook it, freeze it, and reheat it all in the same Ziploc Endurables® Medium Container. Simple as that.

Ingredients
1 cup basmati rice
1 tbsp virgin coconut oil
1 tsp minced fresh ginger
2 cups very hot tap water
¼ cup dried currants
¼ cup golden raisins
2 green onions, sliced
¼ tsp ground cinnamon
¼ tsp salt
¼ cup chopped roasted salted shelled pistachios

Directions

Get a pot of water ready to later cook the rice by first selecting a pot that is just a bit larger than the Endurables® Container. Then, fill with water to about 2 inches below the top rim of pot. Bring water to a boil.

Meanwhile, with zipper open microwave the rice, oil and ginger in Endurables® Container on a microwave-safe dish for 1 min. on HIGH; stir. Continue microwaving 1 to 2 mins. or until rice is lightly toasted, stirring after each minute.
3.
Add the 2 cups water and all remaining ingredients except pistachios to the rice. Squeeze air from Endurables® Container; close zipper. Use tongs to carefully add the Container to the pot of boiling water, pressing the Endurables® Container into the water with tongs to completely submerge under the boiling water.
4.
Cook 30 mins., adjusting the heat as necessary to keep the water at a gentle boil.

Tips & Hints

For best results, try to completely submerge the Endurables® Container in the boiling water. However, if the top empty portion of the Endurables® Container is not submerged, the rice will still cook. Squeezing out the air before closing the Endurables® Container will allow it to more readily remain under water.
