Fruited Basmati Rice Pilaf

A little bit of salty and a little bit of sweet makes the perfect combination for this basmati rice. You can cook it, freeze it, and reheat it all in the same Ziploc® Endurables Medium Container. Simple as that.

Ingredients

    cup basmati rice

  • 1

    Tbsp. virgin coconut oil

  • 1

    tsp. minced fresh ginger

  • 2

    cups very hot tap water

  • ¼

    cup dried currants

  • ¼

    cup golden raisins

  • 2

    green onions, sliced

  • ¼

    tsp. ground cinnamon

  • ¼

    tsp. salt

  • ¼

    cup chopped roasted salted shelled pistachios

    Get a pot of water ready to later cook the rice by first selecting a pot that is just a bit larger than the Endurables Container. Then, fill with water to about 2 inches below the top rim of pot. Bring water to a boil.

    Meanwhile, with zipper open microwave the rice, oil and ginger in Endurables Container on a microwave-safe dish for 1 min. on HIGH; stir. Continue microwaving 1 to 2 min. or until rice is lightly toasted, stirring after each minute.

    Add the 2 cups water and all remaining ingredients except pistachios to the rice. Squeeze air from Endurables Container ; close zipper. Use tongs to carefully add the Container to the pot of boiling water, pressing the Endurables Container into the water with tongs to completely submerge under the boiling water.

    Cook 30 min., adjusting the heat as necessary to keep the water at a gentle boil.

Tip

For best results, try to completely submerge the Endurables Container in the boiling water. However, if the top empty portion of the Endurables Container is not submerged, the rice will still cook. Squeezing out the air before closing the Endurables Container will allow it to more readily remain under water.
