Turkey & Kale Meatballs with Spaghetti and Arrabbiata Sauce is a delicious and nutritious meal. The combination of juicy turkey meatballs with the vibrant flavour of kale brings a unique twist to this classic dish. The spaghetti provides an ideal base for soaking up the rich and spicy Arrabbiata sauce.

 

Ingredients

    Turkey & Kale Meatballs:
  • 2
    lb. turkey, ground
  • 3-4
    cups kale, packed and chopped
  • 3
    tsp garlic, minced
  • ¾ - 1 
    cup Parmesan, freshly grated
  • 1
    tbsp parsley, chopped
  • 1
    egg
  • ¼
    cup breadcrumbs
  • 1
    tsp kosher salt
  • 1
    tsp black pepper, freshly cracked
  • 1 ½
    tsp chili flakes
  • 2
    tsp grapeseed oil
  •   

    Arrabbiata Sauce:

  • 2 x 
    28oz can San Marzano Tomatoes, crushed
  • tsp chili flakes
  • cloves garlic, minced

  • 1

    onion, finely diced

  • 1
    cup basil leaves
  • 3
    tbsp olive oil
  •   
    Kosher salt to taste

    box spaghetti

Directions

    In a large heavy bottomed pan on medium heat 2 tbsp olive oil. Add onion, salt to taste, and sauté until translucent, approximately 3-4 minutes.

    Add garlic, chili flakes and sauté for 2-3 minutes until aromatic.

    Add tomatoes, bring to a gentle boil then reduce heat to low-medium, partially cover and cook for up to one hour stirring and scraping the bottom of the pot as required. Remove from heat and set aside until required.

    Pre-heat oven to 400F.

    In a mixing bowl combine turkey, kale, garlic, Parmesan, egg, salt, pepper and mix well.

    Roll out mixture into 2” balls.

    Pre-heat a large well-seasoned cast iron pan to medium heat. Add grapeseed oil and meatballs and sear on all sides until golden brown, approximately 5-7 minutes.

    Transfer cast iron into the oven for 5-6 minutes and remove meatballs.

    While meatballs are baking, combine spaghetti and water in a Ziploc® Endurables™ Medium Container; With zipper open, place on microwave-safe dish and microwave on HIGH 3 min.

    One cooked, top with tomato sauce and meatballs. Freeze until required.

    To reheat the meal, place the Ziploc Endurables onto a microwaveable safe dish, open the seam to vent 2.5cm and cook on high for 3 minutes. Use oven mitts to remove the pouch from the microwave. Use the cool grab tabs to handle pouch.

    Plate pasta and garnish with freshly grated parmesan, torn basil leaves and chili flakes.

Tip

  1. Freeze additional meatballs and utilize them for other recipes, such meatball subs, sliders, etc
  2. Feel free to use any type of pasta in the recipe
  3. You can use any greens such as swiss chard, spinach, fresh herbs and parsley to add more value/taste.
