Copycat Chicken Lettuce Wraps

With just a little prep, this sweet and savory meal can be made before you jump in your car to go to work. And it’s so worth it. The combo of chicken, green onions, shiitake mushrooms, and a hoisin soy sauce are served up in a healthy lettuce wrap for easy lunch transport. It’s a meal so delectable, your coworkers will think you ordered take out!

Ingredients

    tbsp hoisin sauce
  • 1

    tbsp light soy sauce
  • 1

    tbsp rice wine vinegar, unseasoned
  • 1

    tsp toasted sesame oil
  • 1

    tsp canola oil
  • ¼
    pound ground chicken breast
  • ¼

    cup chopped water chestnuts, chopped
  • 4

    shiitake mushrooms, stems removed and chopped
  • 2

    tbsp green onion, sliced
  • 1

    garlic clove, minced
  • ½
    tbsp ginger, minced
  • 4

    broad leaves of Bibb or Butter lettuce

    Optional serving suggestions: Crispy Rice Noodles and Chili Garlic Sauce

Directions

  • 1 In a small bowl, combine hoisin sauce, soy sauce, rice wine vinegar, and toasted sesame oil. Set aside.
  • 2 Heat oil in a large skillet or wok over medium-high heat. Add chicken and sauté for 2-3 minutes or until cooked through. Add water chestnuts, mushrooms, onion, garlic, and ginger and sauté for an additional 2 minutes until fragrant. Add hoisin sauce mixture and sauté for 3-5 minutes until the sauce begins to thicken (if the sauce isn’t bubbling, increase heat). Remove from heat and allow to cool slightly.
  • 3 To pack for lunch, place the chicken in a Small Rectangle Ziploc® container and seal. Place the container in a Large Rectangle Ziploc® container and add the lettuce. Seal and refrigerate until serving. Reheat the chicken before serving in the microwave for 1 minute. 
  • 4 Serve in lettuce leaves topped with crispy rice noodles, chili garlic sauce, or your favorite condiments.

    Homemade Crispy Rice Noodles


    Heat 1 cup of peanut oil in a wok or deep-sided pot over high heat. Fry 4 ounces of thin rice noodles for 5-10 seconds until puffed and crisp. Drain on a paper-lined plate before serving.



    Chili Garlic Sauce


    Combine 2 teaspoons of chili garlic paste, 2 teaspoons rice wine vinegar, and 1 teaspoon honey. Stir until combined.

This recipe can be doubled and stored in the refrigerator for up to 3 days.
