Mac & Mad Cheese

Macaroni and cheese, a classic comfort food, gets even more delectable when combined with the crisp freshness of broccoli and an assortment of four different types of cheese. Whether you're indulging on a cozy night in or treating yourself to a scrumptious meal, this mac and cheese with broccoli and four cheeses is sure to satisfy all your cravings.

 

Ingredients

    cups of 2% Milk
  • 2
    cups Cheddar cheese
  • 1
    cup Mozzarella cheese
  • ¼ 
    cup Parmigiano Reggiano
  • ¼ 
    cup Asiago Cheese
  • 2
    tbsp All-purpose flour
  • 2
    tbsp Butter
  • 1
    tsp Garlic, minced
  • 1
    tsp Dijon
  • 1
    tsp Hot Sauce, optional
  • ¼
    cup Sweety drops
  •   
    Pinch of Nutmeg
  • cups of dry pasta
  • ½
    cup Milk
  • ¾
    cup Panko breadcrumbs
  •   
    Salt, to taste
  •   
    White pepper, to taste
  •   

    Garnish

  • tbsp Chives, finely chopped
  • tsp Hot Sauce, optional

Directions

    Preheat the oven to 350 degrees. Grease a heat safe dish and set aside.

    Combine pasta and water in a Ziploc® Endurables™ Medium Container; With zipper open, place on microwave-safe dish and microwave on HIGH 3 min.

    Bring milk to a simmer in a pot. In a separate pot add butter and flour and cook out the rawness of the flour on a low medium heat, about 3 -4 minutes, ensuring that the roux does not burn. Add 2 cups of hot milk to the roux to avoid lumps. Increase to medium heat and continue whisking. Add a pinch of nutmeg, once thickened. Season with salt and white pepper. Remove off the heat.

    Add cheddar and whisk until smooth. Add Parmigiano Reggiano and Asiago and continue to whisk. As the cheese melts, add sweet drops, minced garlic, Dijon and fold into the cheese sauce.

    Add the pasta and fold into the cheese sauce with a spatula. Fold in mozzarella, adding a splash of milk to thin out the consistency of the mac and cheese. The sauce will thicken as the mac and cheese bakes.

    Spoon the mac and cheese into a greased baking dish and bake. Sprinkle panko breadcrumbs in an even layer over the top and bake for 15-20 minutes or until the crust is golden brown.

    Add desired amount of mac & cheese to Ziploc Endurables™ pouch and top with chives and hot sauce. Freeze until required.

    Reheating is simple, place the Ziploc Endurables™ onto a microwaveable safe dish, open the pouch slightly to vent 2.5cm and cook on high for 3 minutes. Use oven mitts to remove the pouch from the microwave. Use the cool grab tabs to handle pouches.

    Garnish with more chives and hot sauce and serve immediately.

Tip

  1. Do not cook the broccoli prior to folding into the mac and cheese and then loading it into the container. The broccoli will cook when you reheat inside the Ziploc Endurables™.
  2. Fold in 1 to 2 tbsp of milk or water to loosen it up prior to freezing it to encourage a creamier consistency once cooked.  
  3. Under cook the pasta 1-2 min less than package directions.
